Samali Politiko Part II.....If You Prefer It Sweeter And Moist
There is a way to make my yesterday's sweet, the Samali Politiko, more moist and sweeter if you really like sweetie sweets.
Ingredients for the syrup:
- 1½ cups castor sugar.
- 1¼ cups water.
- 1/3 cups corn syrup.
- 2 Tbsp. lemon juice.
- Rind from one lemon.
Method:
- Combine all ingredients together in a small sauce pan and boil for 5 minutes.
The purpose here is as soon as the semolina comes out of the oven hot, and you have just finished quickly brushing the butter over the surface, start adding the syrup hot as it is a spoon at a time all over the surface. You will see the syrup being immediately absorbed by the semolina sweet. It takes some patience to add spoon at a time but what can you say....cooking especially needs patience.
Wait until your Samali cools off completely.
Then you can enjoy it by cutting off pre-cut pieces with the hazel nut on top.
