Shrimp Au Gratin...Refined
This is one dish you can serve your friends for dinner and never go wrong. Everybody likes shrimp. This is how it goes:
You will need:
Serves 6
- 500 gr small shrimp, cleaned and boiled.
- ½ cup mayonnaise.
- ½ cup sour cream.
- ½ cup fine green peas.
- 2 tsp. lemon juice.
- ½ tsp. cayenne pepper.
- 8 egg whites beaten stiff.
- 2 cups shredded Cheddar or Gouda.
- 6 empty shells of Coquille St. Jacques.
- Salt & Pepper.
Method:
- In a bowl, mix drained shrimp, mayonnaise, sour cream, green peas, lemon juice, cayenne pepper, salt and pepper.
- In another bowl, beat the egg whites till stiff.
- Fold shredded Cheddar or Gouda in the stiff egg whites.
- Fill the empty coquille st. jacques shells with the shrimp mixture.
- Top each shell with the shredded Cheddar or Gouda / egg white mixture.
- Bake for 10 minutes in a 250 degree C oven or till a golden brown color.
Serve immediately with a dry white wine.
