Sweet Corn And Lentil Salad...Yet Another Way To Eat Lentils.
It is curious how many ways there are to use lentils . This is a very nice one and fresh for summer.
Your will need:
- 300 gms canned and drained sweet corn.
- 200 gms cooked lentils
- 2 Tbsp. finely chopped parsley.
- 1 small onion very thinly sliced into rings or if you have 2 scallions on hand even better, thinly sliced.
- Salt and pepper to taste.
- Cider vinegar to taste.
Method:
- In a bowl, combine drained corn and cooked lentils. Mix well.
- Add finely chopped parsley and mix well.
- Add sliced onions or scallions and mix well.
- Add salt and pepper and mix well.
- Add cider vinegar and mix well.
- Mix in such a way that the yellow of the corn, dark brown of the lentils and the green parsley are equally dispersed and look nice.
- Refrigerate before serving.
