Improvised Tortilla Filling...GrekMex Nearly TexMex.
Having lived and associated with Americans for so long especially with those of the South, Tex Mex food has become second nature to me. I bought some flour tortillas the other day ( I don't know why, the only corn tortillas I can find are in the ready combo packages for Mexican food - I used to be able to find them flat and canned by the "El Paso" brand). I just thought of a filling that some of my friends liked and maybe you would let me share the recipe with you.
For one tortilla filling you will need.
- 1 flour tortilla.
- 3 Tbsp. of re-fried beans. (kidney beans)with 2 slices of crisp breakfast fried bacon broken up in little pieces.
- 3 Tbsp. of plain sweet corn, water drained, right out of the can.
- 2 whole egg omelet. (or 2 egg whites) with a diameter nearly equal to that of the tortilla.
- 2-3 slices of Gouda or Cheddar cheese.
- A few slices of chili (optional).
Method:
- Lay the tortilla in a large pizza baking pan.
- Lay the omelet on the tortilla.
- Spread three Tbsp. of re fried beans on the omelet.
- Sprinkle the three Tbsp. of sweet corn on the re fried beans.
- Top with 2 - 3 slices of the cheese.
- Cut a few pieces of chili (optional).
- Roll the whole tortilla as best as you can and secure with a toothpick.
- Top with 2 - 3 slices of the cheese.
- Cut a few pieces of chili (optional).
- Bake at 180 degrees C for 5-8 min to melt the cheese a heat the whole.
Serve with lots of Tequila!!
