Curried Green Peas
You will need:
Serves 6
- ½ kg green peas.
- 2 Tbsp. chopped onions.
- 2 Tbsp. butter ghee or olive oil.
- 2 Tbsp. flour.
- ½ tsp. Madras medium hot curry powder.
- ¼ tsp. salt.
- ¼ tsp. black pepper.
- 1½ cups coconut milk.
Method:
- Saute onion until tender stir in curry, flour, salt and pepper.
- Cook on low heat until mixture is bubbly.
- Stir in coconut milk slowly until mixture is homogenous.
- Gently stir in thawed baby peas and simmer for about 5 minutes over low heat.
Serve over basmati or Thai rice or on rice noodles.
