Porcini Rice...As opposed to Risotto Ai Porcini
Today I will have the pleasure to share with you a normal white rice made with dried porcini mushrooms. Please do not mistake this for a risotto with porcini. I don't like risotto for the only reason that it looks like porridge which puts me off.
You will need:
Serves 6 as a side dish.
- 2 cups of normal white rice.
- 3 cups of heavy beef or chicken stock.
- 1 Tbsp. butter.
- 1 cup of medium cut dried porcini.
- Salt and pepper.
Method:
- Combine porcini and water to boil on high heat. Cover.
- When water boils, add salt, pepper and rice. Cover.
- Lower heat to minimum, and set timer to 20 minutes. Make sure the heat stays at minimum ( I cook on gas).
- When timer goes off, after 20 minutes, lift cover, put a kitchen towel to cover the saucepan, then cover with lid till you are ready to serve.
- Before serving, add the butter and mix.
- At table you could sprinkle some parmezan cheese over the top.
Serve as a side dish to any meat or chicken you wish.
