Peaches.........A Suggestion
We are in the full season of peaches. Peaches can be used to make many deserts and savory dishes. I would love to suggest a very easy, simple and quick dessert using yellow and white peaches.
You know that the white peaches have a unique and wonderful aroma which, by the way, goes very nicely with "brut" French champagne. Put a slice in your flute glass while drinking and enjoy the mixture of aromas.
Coming back to our desert, you would want to buy 1 kg each of white and yellow peaches. Ask for peaches that are done and ready to eat that same day.
You will need:
- 1 kg yellow peaches.
- 1 kg white peaches.
- Juice from ½ a lemon.
- 1 Tbsp. Grand Marnier Red Ribbon.
Method:
- Refrigerate peaches till a few hours before your guests are due.
- Wash and dry with a kitchen cloth, cut in half, hold each half in each hand and twist to separate each half.
- Normally they should separate very easily and cleanly and remove the seed which should come off very easily.
- Cut with a sharp knife all the peaches in equally shaped wedges.
- Add lemon and mix carefully not to injure the peach wedges.
- Cover with cling film not to lose any of the beautiful aroma and refrigerate.
- At the last minute uncover and add the Grand Marnier, mix carefully some freshly cut mint leaves and a few very thin slices of lemon on the topto garnish.
