Grilled Pork Tenderloin With Cold Yogurt / Gorgonzola Sauce...Something Cool & Different
The weather in Greece now is hot. Like 38 - 39 degrees C hot so since there are many ways to skin a cat, I would like to share with you a different way to serve pork tenderloin.
You will need:
Serves 6
- 2 whole pork tenderloins about 1 kg total, cleaned from any fat cut into 150 gms pieces, partially slit in the middle and opened and beaten flat with the meat hammer.
- 200 gms. of gorgonzola cheese cut in small pieces.
- 200 gms of thick Greek yogurt.
- Salt and freshly ground green pepper.Method:
- First prepare your sauce by mashing your Gorgonzola with a fork, then adding the cold yogurt.
- With the vertical hand blender pulse your way around the sauce to combine it into a smooth creamy texture. Refrigerate until you grill your tenderloin.
- Place your pounded meat pieces and grill till pork is well done.
- Add your salt and green pepper to the meat.
- Serve with cold Gorgonzola / yogurt sauce and tomato wedges sprinkled with some fresh mint leaves.
That wasn't too bad was it??
Enjoy with a glass filled with ice cubes and lemon flavored Perrier.
