Marinated Green Olives......Delicious With A Drink By The Sea
It is a rule that when you drink alcohol you should always eat something oily. Drinking on an empty stomach is not generally recommended.
Olives, black or green are always served because of the oil they contain. Oil coats your stomach and renders alcohol less harmful.
I would like to share with you today an easy recipe to render green olives more interesting.
You will need:
- 350 gr of pitted green olives either sliced or whole.
- 2 branches of fresh fennel finely chopped.
- 2 sprigs of fresh thyme.
- 3 tsp. of dry coriander crushed.
- 5 cloves of garlic crushed, smashed, and finely chopped.
- 2 chilies thinly sliced
- Pepper to taste
- No salt the olives are salty enough.
- 1 inch fresh ginger chopped.
- 1 lemon washed and cut in small pieces zest and all.
- Olive oil
Method:
- Mix all above in a big bowl.
- Fill a jar and complete with olive oil to seal from the atmosphere.
- Close the cap tightly.
- Leave for a couple of days at room temperature then refrigerate for at least 2 weeks.
Enjoy with your favorite drink by the seaside.
