Quick Mild Curry With Rice....Going East
Very often you would want to change tastes, cuisine, go on a culinary trip somewhere. A quick Indian dish would be a very simple chicken curry with plain white rice.
Curry powder is an ingredient/ a collection of spices mixed together to give an extremely aromatic twist to what you may be eating everyday. It can be found ready made in any supermarket It sounds complicated but you will see that it is very easy and quick to make.
If you like Indian / Pakistani or Chinese food you must plan a day to go to the market for such basic ingredients, like curries, Chinese mushrooms, garam masala, turmeric powder, dry coriander, etc.to buy them (very inexpensive) and have them in your kitchen cabinet, in order to be always ready to perform during a Pakistani or Chinese surprise.
You will need:
Serves 2:
- 2 Breasts of Chicken cut in cubes.
- 1 Onion chopped thinly .
- 2 Tsp. Curry Powder in a bowl with some water to make into a paste.
- 1 Tsp. Turmeric powder.
- 1 inch of fresh ginger grated.
- 1/2 cup coconut milk. It can also be found in any supermarket.
- Some oil to stir fry the chicken (does not need to be olive oil)
- Salt and freshly ground pepper.
Method:
- Heat oil in skillet, add chicken cubes and onion till browned on all sides.
- Add curry paste rinse bowl with water to make sure you got all the curry paste out of it.
- Stir fry the chicken with the curry, add the coconut milk.
- Bring to a boil, then lower heat to simmer until chicken is cooked.
- Add the fresh ginger and serve on plain white rice and a cucumber / yogurt salad with fresh mint.
