String Beans In Tomato Sauce............Spicy Tomato Sauce
This is an every day type of dish. The addition of dry coriander to fry with the garlic and onion at the beginning, makes this dish oriental for those who like "The Orient" and oriental food.
You will need:
Serves 4
- 500 gms of frozen thin green string beans, thawed.
- 500 ml of boiling hot chicken stock.
- Enough olive oil (prefer Greek extra virgin Kalamata Olive Oil) to cover the bottom of the 28 cms sauce pan.
- 70 gms of tomato paste.
- 6 cloves of garlic passed through the garlic press.
- 1 medium onion finely chopped.
- 2 Tbsp. of ground dry coriander.
- 1 chilli finely chopped.
- Salt.
Method:
- Heat olive oil in sauce pan, add onion, garlic, and stir fry.
- Add the coriander and continue to stir fry till that absolutely delicious aroma of that mixture reaches you.
- Add the string beans, stir and mix.
- Add the tomato paste, the boiling chicken stock (or water for 100% vegetarian) and the chilli, stir and mix.
- Add salt to taste.
- Bring to a boil, cover, lower heat, and simmer for 15 minutes or till the oil separates from the sauce.
Serve with Vermicelli Rice already shared with you. in previous recipes.
