Lentil Curry.............Vegeterian From The Fiji Islands
You will need:
Serves 4
- 200 gms of lentils.
- 2 large onions, finely chopped.
- 2 green chilis finely chopped.
- 1/2 tsp. ground cumin.
- 1 Tbsp. curry ready curry mix.
- 6-8 cloves of garlic crushed and finely chopped.
- 1/4 - 1/2 tsp. turmeric powder.
- 2 Tbsp. any kind of cooking oil.
- 2 tsp. ground coriander.
- 1 inch worth of fresh ginger grated.
- 3 tomatoes quartered.
- Juice of one lemon.
- Salt and freshly ground pepper.
Method:
- Add lentils to a sauce pan and cover with water. Add turmeric. Bring to a boil and lower heat to simmer, till lentils are tender.
- Separately fry the onions, the crushed ginger, garlic, chillies, quartered tomatoes, curry mix and rest of spices.
- Stir in lentils, cook for 5 minutes more.
- Add juice of one lemon. Stir.
Serve with rice
