Chicken Souvlaki Marinated in Soy Sauce/Oil/Lemon........Deliciously Exotic
The national food in Greece is practically the Souvlaki. Chicken, beef, fish, pork, lamb souvlaki is served everywhere even in the street, like in the United States they serve hot dogs, or Germany "wurst" .
Since the tendency nowadays is to eat white meat as opposed to red, chicken is widely used. We are therefore trying to cook chicken in a variety of ways so as not to get bored of it!!
You will therefore need:
Serves 4
- 500 gms of Chicken breast cut in bite size pieces marinated, and refrigerated 2-3 hours before grilling.
For the Marinade:
- 2 Tbsp. soy sauce.
- 2 Tbsp. olive oil (prefer Greek extra virgin Kalamata olive oil).
- 2 Tblsp. lemon juice.
- Salt, and pepper. Be careful with the salt as the soy sauce is already salty.
- 1 chili pepper finely chopped, if you wish.
- 2 cloves garlic passed through the press.
- 1 inch freshly grated ginger.
- 2 Tbsp. thyme.
For the preparation of the skewers you will need:
- 8 wooden or fancy metallic skewers.
- 16 cherry tomatoes.
- 1 green bell pepper cut in 1 inch squares.
- 1 yellow bell pepper cut in 1 inch squares.
- 2 onions cut in quarters separating the onion layers.
Method:
- Pass your skewer through one cherry tomatoe.
- Pass 2 pieces of chicken.
- Pass 1square of green bell pepper.
- Pass 2-3 other pieces of chicken
- Then again add 1 piece of onion.
- Then pass another 2 pieces of chicken
- Pass a square of yellow bell pepper.
- Conclude with another cherry tomato.
Note 1: Play it by ear depending how long your skewers are but they should always begin with a cherry tomato and end with a cherry tomato, and in between, one yellow, one green, and a piece of onion. Baste some more with the marinade, let chicken be at room temperature before starting to grill either in the patio on a charcoal /gas grill or insdoors with an indoors grill.
Chicken has to be well cooked but not dried. Make sure not to press each piece of chicken too close to its neighbors or else the part where they touch will not cook .
Note 2: you can use the marinade for beef, lamb, pork, as you wish.
Serve with French Fries, rice, rösti (one of my previous recipes).
